a guy writes a book. He dies, and his son gets the rights to that book. His son decides to write a sequel. Is the sequel considered canon?

It can go either way

Chances are if it’s good, people will say it’s canon
If it’s not, they won’t

if it was son of toriyama and it would be a db manga continuation and it would have good feats, no, it would not be canon.

Some people refuse to acknowledge that the Star Wars prequels are canon.

Interpretation of canon is up to the readers. Of course in VS we need some form of standard, but other than that...
